Sarafin Fume Blanc
Sauvignon Blanc grapes that are harvested late in the season, are used to Sarafin Fume Blanc which in turn gives us a full bodied wine with a complex structure. After the grapes are crushed, “Sur lie” method is used the juice is not filtered and is fermented on its lees in 225 lt barriqes. After the 2-3 more months in lees during which the barrels are stirred periodically to maximize the contact of the lees and the wine. These methods give Sarafin Fume Blanc its true varietal character. The wine is then seperated from its lees and aged in oak barrels for another 6 months. After completing an 8 month journey in oak the wine is bottled and aged for more than a year in our underground cellars until it reaches its desired maturity. Sarafin Fume Blanc is a rich yet easy to drink wine showing strong fruity aromas such as melon and citrus. The oak is present both on the nose and the palate, helping the long, smooth finish.
